Kamut - An Ancient Grain For Sustained High Energy

Kamut is an heirloom grain from ancient Egypt that was rediscovered in 1945 by an American soldier who broke into a burial crypt and found a stone urn containing hundreds of extra-large wheat seeds. He sent them home to a relative but not much was done with them for the next 40 years.

Once the grain's superior nutritional content was established and its hypoallergenic properties were recognized, it ceased to be an historical novelty (known as “King Tut’s Wheat”) and experiments were started to find the best places to grow it.

It is the “wheat you can eat” for up to two-thirds of the people who are allergic to common wheat. Even so, it is important to test yourself with a small amount of it because, like most grains, it is glutinous, and some people are both allergic to wheat and intolerant of gluten.

This grain contains up to 40% more protein, 30% more Vitamin E, 27% more lipids, and has more mineral content than modern wheat. It also has a lower gylcemic index than common wheat, which means that glucose is liberated more slowly while it is being digested, causing it to supply energy for a longer period of time.
